Simple Chicken Pot Pie Recipe

This year’s Thanksgiving dinner looked a little different for me as I was packing up my kitchen to move and not traveling to see family for the holiday. Although I was definitely not going to have time to make a full Thanksgiving dinner for one, I still wanted to cook something that captured the essence and comfort of Thanksgiving.

My mind immediately went to a savory pot pie, incorporating the same Mirepoix (carrots, onions, and celery) that I use to make my stuffing. With the addition of some other traditional thanksgiving seasonings such as sage, thyme, and poultry seasoning, adorned with leaves cut from the extra dough, this chicken pot pie was the perfect thanksgiving dinner recipe for one!

In general chicken pot pies one of those comfort foods that’s perfect to eat during the colder months I’m very easy to make.

I hope this recipe brings you just as much comfort as it did to me!

Simple Chicken Pot Pie Recipe

Ingredients

  • 2 pre-made pie crusts ( the rolled out dough)

  • 4 tbsp butter

  • 1 onion, chopped

  • 2 stalks celery, chopped

  • 3 carrots, chopped

  • 1 tsp. poultry seasoning

  • 1/2 tsp. sage

  • 1 tsp. of thyme

  • ¼ cup flour

  • 2-3 cups chicken stock

  • 2 cups cooked chicken thighs or breast

  • ½ cup frozen peas, thawed

  • ½ cup milk or cream

  • 1 egg, lightly beaten

  • Salt

  • Pepper

** season to taste **

Instructions

  1. Preheat oven to 350 degrees. Melt butter in a dutch oven or saucepan and cook the chopped onion, celery, and carrots until the onions are translucent.

  2. Add in the peas and your freshly cooked turkey, simmer for 2 minutes. Sprinkle in the flour and cook for another 2 minutes.

  3. Add chicken stock and turn heat to medium for 10 minutes.

  4. Add poultry seasoning, sage, thyme, and cream. Let simmer for 5 minutes or until mixture has thickened.

  5. Place pie crust dough in the bottom of your pie dish or casserole dish and fork a few holes in the bottom of your pre-made pie crust before you pour in the mixture.

  6. Top with another pre-made pie crust and seal top and bottom edges of the dough by pinching them together.

  7. Brush with egg wash.

  8. Make a small slit on the top of the pie.  

  9. Bake in the oven for 20-30 minutes until the crust is golden brown.

    You could always make your own crust. But, I should tell you, this is the easiest way to do it.
